  Hello, and welcome. If you’re reading this, congratulations – it was Blue Monday yesterday, and we got through it. According to psychology experts, Blue Monday is the most depressing day of the year. The weather is cold, the skies are grey and it’s around the time when our new year resolutions are showing early signs of wear and tear. So we get towards the end of January and we’re all feeling a bit gloomy. How did you feel yesterday?  Part of my reason for writing this piece was because I had a gloomy day. I’m not even sure why.   Hey Everyone, We’re back to say hello and check in with you wonderful people again. We’re a couple of weeks into Lockdown now and I’m sure many people have developed coping strategies. Any sort of pasta dish are usually meals where you can get creative and really make them your own, so there’s no real right answer – as long as the basic bits are there!  Personally, I’m the kind of person that finds things like tomatoes a bit hit and miss. I like tomato sauce and tomatoes on pizza but I could never eat a tomato sandwich. However, put them in a Spag Bol and I won’t bat an eyelid. Hi Everyone, We can all agree that another lockdown is not ideal. We are all feeling worried about keeping ourselves occupied during another period of time at home.  What I will start off by saying, is that in some cultures across the world, a crisis is seen as an “opportunity”. And so, people are encouraged to see the positives they can take from a situation. To apply this to the previous lockdowns, how many of us had come across Zoom before 2020?
